Build a Better Burger 25th Anniversary Recipe: Burgers La Mancha

Sutter Home Build a Better Burger Wine Pairing - Zinfandel

Caramelized red peppers and olive aioli sit atop the sweet and smoky paprika seasonings of this People’s Choice Award winner from the 2009 Build a Better Burger Recipe Contest.

Prepared in 25 minutes or less, every bite of this burger is made better with Sutter Home Zinfandel.

 
INGREDIENTS
SMOKY OLIVE AIOLI
3/4 cup mayonnaise
2 cloves garlic, finely chopped
1 teaspoon sweet smoked Spanish paprika
3 tablespoons finely chopped pitted manzanilla olives
 
SWEET CARAMELIZED REDS
1 tablespoon Colavita Extra Virgin Olive Oil
2 red bell peppers, sliced
1 large red onion, sliced
2 tablespoons dark brown sugar
1 teaspoon sweet smoked Spanish paprika
½ cup Sutter Home Red wine
 
PATTIES
2 1/4 pounds ground beef chuck
1/2 cup finely minced sweet onion
1/4 cup finely chopped fresh cilantro
2 cloves garlic, minced
1 tablespoon Tabasco Chipotle Pepper Sauce
2 teaspoons sweet smoked Spanish paprika
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly cracked black pepper
 
Vegetable oil, for brushing on the grill rack
6 slices fresh Manchego or Jack cheese
6 high-quality hamburger buns, split
6 romaine lettuce leaves, trimmed to fit the buns
 
DIRECTIONS
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
 
To make the aïoli, combine all the ingredients in a bowl and mix well. Cover and refrigerate.
 
To make the caramelized reds, heat the olive oil in a large fireproof skillet on the grill rack. Add the bell pepper and onion and sprinkle with the brown sugar and paprika. Sauté until caramelized, about 10 minutes. Add the Sutter Home Red wine and simmer for an additional 3 minutes or until slightly reduced. Cover the skillet and set aside.
 
To make the patties, combine all of the ingredients in a large bowl and mix gently but thoroughly. Form the mixture into 6 patties.
 
Brush the grill with vegetable oil. Place the patties on the grill, cover and cook, for 4 to 6 minutes per side. During the final 2 minutes of cooking, top each patty with a slice of cheese and place the buns, cut side down, around the outer edges of the grill to lightly toast.
 
To assemble the burgers, spread the cut sides of the buns with the aïoli. Place a lettuce leaf on each bun bottom and top with the patties. Spoon a portion of the caramelized reds over each patty. Add the bun tops and serve.
