BACON GARLIC BUTTER POPCORN BURGER

As I was watching one of my favorite movie with a bowl of popcorn in hand, I got my ah-hah moment…………to create a burger with popcorn.Everyone loves popcorn !! Especially buttered popcorn !!! It’s crazy….. but I did it, popcorn in a burger. And you thought popcorn was only good with a movie…..Not anymore….., popcorn goes with burgers !! This takes a classic burger to a new dimension of flavor. Enjoy my Bacon Garlic Butter Popcorn Burger with a good movie and your favorite glass of Sutter Home wine.

3 Tablespoons peanut oil
1/3 cups of high quality popcorn kernels

Bacon Garlic Butter Popcorn Spread:

1 cup butter, soften
5 slices cooked bacon. chopped
1 teaspoon garlic, chopped
1/2 cup ground popcorn, chop in a food processor to the size of rice (see note)
2 Tablespoons honey
2 Tablespoon Sutter Home Sauvignon Blanc
1 teaspoon orange zest
1/8 tsp Kosher salt

Patties:

2 1/4 pounds ground chuck (80/20)
1/4 cup Sutter Home Sauvignon Blanc
1/2 cup ground popcorn, chop in a food processor to the size of rice (see note)
1/3 cup, fresh corn, removed from the cob, chopped in a food processor, quick pulses until all the kernels are broken down. (consistency like cream corn)
3 garlic cloves, chopped
2 Tablespoons Worcestershire sauce
1 Tablespoon honey
2 teaspoons Kosher salt
1 teaspoon fresh ground pepper
1/2 teaspoon cayenne pepper

Colavita Extra Virgin Olive oil, for brushing the grill rack and buns.

6 King Hawaiian buns, split

6 pieces Green Leaf lettuce

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. Place a fireproof 3 quart covered saucepan on the rack.

To pop the popcorn, heat the peanut oil in a 3 quart saucepan on medium high heat. Place 4 popcorn kernels into the oil and cover the pan. When the kernels pop, add the rest of the popcorn kernels and cover with the lid. Once the popping starts, gently shake the pan back and forth until the popping stops. When the popping stops, remove from the heat, remove the lid and dump the popcorn immediately into a large bowl. Set aside.

Place large iron skillet on the rack to preheat for the bacon

To cook the bacon, Place the bacon in the preheated iron skillet. Cook the bacon until crisp about 5 to 7 minutes a side. Remove the bacon and drain on a paper towels. Let the bacon cool to room temperature. Remove the skillet from the grill.

To make the Bacon Garlic Butter Popcorn Spread, in a food processor, add the butter, bacon, garlic, ground popcorn, honey, Sauvignon Blanc, orange zest, and salt. Mix until blended together. Place mixture in a bowl and set aside in a refrigerator.

To prepare the patties, In a large bowl, place the chuck, Sauvignon Blanc, ground popcorn, fresh corn, garlic, Worcestershire, honey, salt, pepper, and cayenne . Handling the meat as little as possible to avoid compacting it. Gently mix together using a large spoon. Form into 6 patties with a thumb dimple in the center of each patty and refrigerate until ready to grill.

Brush the grill rack with olive oil. Place the patties on the grill, add about one Tablespoon of the Bacon Garlic Butter Popcorn spread to the center of each patty, cover and cook for 5 minutes. Turn the patties, and add about one Tablespoon of the Bacon Garlic Butter Popcorn spread to the center of each patty, cover and continue cooking for another 5 minutes. During the last 2 to 3 minutes of grilling the patties, brush the buns with olive oil and place the buns, cut side down, on the outer edges of the rack and toast lightly to golden brown.

To assemble the burger, place one leaf of Green Lettuce on each bottom bun and add the patty. Add the toasted bun top and serve immediately.

Makes 6 burgers.
