You Won’t Believe There’s Avocado in These Brownies!

If you’re looking for an unexpectedly rich and decidedly delicious and nutritious dessert, you’ll want to whip up a batch of these awesome Avocado Fudge Brownies. They’ll satisfy your crew’s sweet tooth while keeping your goal of serving more fruits to the family on track. (Yes, avocado is a fruit and, even more specifically, a single-seeded berry. Who knew? Maybe you did.)

While mixing avocado with chocolate may sound strange, these versatile fruits are a dessert staple in many South American countries. Their smooth, creamy texture makes an ideal base for baked goods, smoothies, milkshakes, and even ice cream.

Avocados are also rich in vitamins and minerals, comprising nearly 20 essential nutrients, including fiber, potassium, and folic acid. Talk about the ultimate brownie bonus. And for indulging in this sweet and healthy treat, a glass of Sutter Home Cabernet Sauvignon or Pinot Noir pairs nicely with the creamy, chocolatey flavors.

Nutritious, chocolatey, and yummy? Looks like you can have your cake and eat it, too.

  • 1 medium ripe avocado, mashed
  • 1/4 cup coconut oil
  • 1 large egg, lightly beaten
  • 1/2 cup pure maple syrup
  • 1 tsp. pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp. sea salt
  • 1/4 cup coconut flour
  • 1/3 cup dark chocolate chips

Preheat oven to 375 degrees.

In a medium bowl, mix together avocado, coconut oil, egg, maple syrup, and vanilla extract.

In a separate bowl, combine cocoa powder, salt, and coconut flour, then add to the avocado mixture. Add chocolate chips, then pour batter into an 8×8-inch baking pan lightly coated in cooking spray. Bake for 30-35 minutes.

Let cool before cutting and serving brownies.
