You Won’t Believe There’s Avocado in These Brownies!

- 1 medium ripe avocado, mashed
- 1/4 cup coconut oil
- 1 large egg, lightly beaten
- 1/2 cup pure maple syrup
- 1 tsp. pure vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp. sea salt
- 1/4 cup coconut flour
- 1/3 cup dark chocolate chips
Preheat oven to 375 degrees.
In a medium bowl, mix together avocado, coconut oil, egg, maple syrup, and vanilla extract.
In a separate bowl, combine cocoa powder, salt, and coconut flour, then add to the avocado mixture. Add chocolate chips, then pour batter into an 8×8-inch baking pan lightly coated in cooking spray. Bake for 30-35 minutes.
Let cool before cutting and serving brownies.
