What You Need
- Refrigerated pie crust
- Pumpkin puree
- Light brown sugar
- Heavy cream
- Pumpkin pie spice
- Salt
- Egg
- Cookie icing
How To Make
- Preheat oven to 400°F; line 2 baking sheets with parchment.
- Roll out pie crust on a floured surface; cut shapes with pumpkin or ghost cookie cutter. Chill cutouts.
- In a bowl, mix pumpkin puree, brown sugar, cream, pumpkin pie spice, and salt.
- Place filling (about 2 tbsp) in the center of half the cutouts, leaving a border.
- Brush edges with egg wash, top with another cutout, press seams, and crimp with a fork.
- Bake 15–20 minutes until golden; cool for 5 minutes.
- Decorate with icing and enjoy!
