Truffled Gouda Mushroom Duxelle W/ Black Garlic Truffled Aioli
Ingredients
- 6 Brioche Buns
- 2 Pounds 80/20
- 2 Cup Truffled Gouda Cheese
- 12 slices Gouda Cheese
- 12 Bacon strips
- Arugula
- Truffled Gouda Mushroom Duxelle
- 2 baskets Cremini Mushrooms
- Few sprigs of Thyme and Parsley
- Butter
- 10 cloves of Garlic
- 2 Shallot
- Truffled Black Garlic Aioli
- 2 Head Black Garlic
- 2 Cup Mayonnaise
- 3 Tablespoon chopped Cilantro
- 1 Teaspoon Sugar
- 1 Lime (juiced)
- Salt to taste
Instructions
- Pre-heat your Grill
- Truffled Gouda Mushroom Duxelle:
- In a pre-heated saute pan, add olive oil, shallots, garlic and cook for 5 mins
- Add mushrooms and saute for 7 mins
- Turn off flame and add butter, thyme and parsley.
- Mix, transfer to a bowl and set aside or in fridge to cool down
- Once cool add shredded truffle gouda cheese
- Cook bacon
- Set aside
- Truffled Black Garlic Aioli:
- In bowl add Mayo, Cilantro, Lime juice, sugar, chopped Black Garlic, Truffle Oil
- Mix ingredients together, salt n pepper to taste
- Cover and set aside
- Burger Patties:
- Shape 1/3 of ground beef into a burger patty
- Stuff patty with 2 spoonfuls of Duxelle mixture
- Salt n Pepper one side of burger patty, that side on grill first, season other side
- Cook burger to your preferred internal temperature
- Add cheese and bacon
- Toast buns, dress buns with aioli and arugula
- Add patty and enjoy
