1/8 Cup pickled jalapenos, finely diced with 1 T. jalapeno juice
2 T. cilantro, finely chopped
To taste, salt and pepper
Garnish: crumbled cotija cheese
Bun: brioche bun, lightly toasted
Instructions
For the burger:
1. Pre-heat oven to 375 degrees Fahrenheit.
2. Combine all burger ingredients in a medium-sized bowl.
3. Divide into 6 even pieces or weigh out to 1/3 of a pound if you want to be particular. Flatten into a round patty shape.
4. In a large skillet, heat to medium high and spray with cooking spray.
5. Cook burgers 2 minutes onn each side and finish in the oven for 10-12 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Remove from oven.
For the queso fundido:
1. In a small saucepan on medium heat, melt the butter.
2. Add the onions and garlic and saute until slightly browned. Add the flour and cook until a roux forms.
3. Add the milk and let the mixture thicken and come to a boil.
4. Remove from heat, add cheese and seasonings.
5. Taste and adjust the seasonings if necessary.
For the fried egg:
1. In a small non-stick frying pan, heat to medium high heat, and spray with cooking spray.
2. Crack egg into pan and allow to cook.on one side for 2 minutes, then flip over and cook for 2 more. (If your desired consistency is a less runny yolk, then just cook on each side for 1-2 minutes longer.)
For the salsa verde:
1. In a 375 degree pre-heated oven, combine the onions, tomatillos, and jalapenos with the oil on a baking dish. Roast in the oven until golden brown about 12-15 minutes. Temove from oven.
2. Place the tomatillo mixture in a medium sized bowl, add cilantro, juice and seasonings. Blend with a handheld immersion blender or regular blender until a thick salsa consistency has been reached. Taste and adjust seasonings if necessary.
To assemble burger:
1. Place the bun on the plate, top with patty, 2 T. queso fundido, fried egg, 1T. salsa verde, 1 T. pickled jalapeno pico de gallo and garnish with crumbled cotija cheese.
