Make the Pickled Cucumbers with Shallots and Red Onion~
In a medium glass mixing bowl, combine vinegar, sugar and salt. Add cucumber, shallots and red onion. Stir to combine. Cover and refrigerate.
Make the Tzatziki Sauce~
In a medium glass mixing bowl, combine all tzatziki sauce ingredients. Stir until thoroughly combined. Cover and refrigerate.
Make the Waffle Fries~
Fill medium heavy pot with peanut oil, 2 inches deep. Heat over medium heat until hot.
Use waffle cutter to cut potatoes into 1/4 inch waffle slices. Fry until golden brown. Drain on paper towels and sprinkle with Kosher salt.
Grill the Pork Slider Patties
Light barbecue and preheat grill to 350 degrees.
Combine salt, garlic powder and pepper.
Divide pork into 12 equal balls.
Pat into slider patties.
Season both sides of each patty with seasoning.
Grill sliders on preheated grill for about 3 minutes per side, flipping when they release easily from grill.
Grill other sides for an additional 3 minutes. Use instant read meat thermometer to check sliders to make sure they are cooked to 160 degrees. Remove from grill.

Thinly sliced heirloom tomatoes
Waffle Fries
Split potato rolls into crowns and heels.
Spread insides of crowns and heels with Tzatziki Sauce.
Place one Grilled Pork Slider Patty on each potato roll heel.
Top with Pickled Cucumbers with Shallots and Red Onion.
