Instructions
1. Grill the lime wedges until they have a slight char and are slightly dried out.

3. Place the mixture into a med. Sauce pan over moderate heat and bring the mixture to a boil, stirring occasionally, making sure the mixture does not burn.
4. Cook the mixture for 10 minutes and hold hot (above 141 degrees F.) until needed for the sliders.
5. In a large mixing bowl mix cumin, fennel, onion, garlic, parsley, cilantro, mint, and coriander. Mix until well incorporated.
6. Add the Lamb, salt and pepper and mix with your hands until the mixture is well incorporated.
7. Form Patties into 2.5 Ounces patties ( For consistency purposes I use a 2.5 Ounces ice cream scoop)
8.
9. Grill on a charcoal grill on high heat for 2 minutes then rotate them 90 degrees.
10. Grill for another 2 minutes then flip the burgers
11. Grill for two minutes and then rotate them 90 degrees.
12. After two minutes take a temperature reading. The burgers need to reach 165 degrees and
when they do remove them from the grill.
13. Let the burgers rest for 3 minutes. While letting the burgers rest, lightly grill the challah buns.
14. Top each burger with 1 Ounces of garlic lime chutney
15. Plate each burger and enjoy with friends, family, and loved ones!
