6 Handfuls (about 6 cups) store bought French fries
6 Bacon slices, diced small
1/2 Cup red onion, diced small
1/2 Cup scallion (green parts), chopped
1 Large tomato, diced small
3 Jalapeno peppers, sliced thin
1 1/2 Cups romaine lettuce, sliced small
3/4 Cup sour cream Burger:
3 Pounds ground chuck beef 80/20
3/4 Pound ground sausage meat
1 1/2 Tablespoons chili powder
Salt
Pepper
12 Slices pepper jack cheese
6 Kaiser rolls
Instructions
1. In a medium size sauce pan, melt butter, whisk in flour and cook on medium heat for a couple of minutes
2. Slowly whisk in milk, continuing to whisk until thickened
3. Stir in salt, pepper, nutmeg and cheese
4. Continue to cook until cheese has melted
5. Place French fries on a cookie sheet and cook according to package directions
6. In a large frying pan, cook bacon on both sides on medium-high heat until browned and crispy
7. Drain on paper towel
8. Dice and chop all topping ingredients
9. Preheat grill
10. Place chopped meat and sausage in a large mixing bowl, add in chili powder and mix until just mixed through (do not over mix)
11. Make 6 patties, season burgers with a generous amount of salt and pepper
12. Cook burgers on the preheated grill on medium-high heat for about 3 minutes on each side, or until almost cooked through, only flipping once during cooking
13. Place 2 slices of cheese on each burger, close grill lid to melt cheese
14. Remove burgers and let rest a couple of minutes
15. Place a burger on each Kaiser roll bottom, evenly add fries to each burger, top each evenly with cheese sauce, bacon, red onions, scallions, tomatoes, peppers and lettuce
16. Drizzle each with sour cream
17. Top each burger with a top roll and serve. Enjoy!
