1 pound of Country style breakfast sausage with sage
1 small sweet yellow onion diced (about 1/2 Cup)
1/2 Cup heavy cream
1/4 Cup milk
1/2 Cup shredded white American cheese
Patties:
2 1/4 Pounds freshly ground beef chuck
2 1/4 Teaspoons kosher salt
1 teaspoon ground black pepper
Eggs:
6 large eggs
1 tablespoon sweet cream salted butter
1/2 teaspoon salt
1/2 teaspoon pepper
6
extra large fresh buttermilk biscuits
Instructions
To make the gravy:
add sausage and onions to a medium-size saute pan (about 9 to 10inch). Saute over medium-high heat till sausage is cooked and onions start to caramelize. Should take about 5 minutes. (stir regularly to break up sausage).
Once sausage is cooked add heavy cream and milk bring to a boil, lower to a simmer and add cheese and stir till cheese is melted and well mixed into the gravy.
To make the patties:
Combine salt and pepper with the ground chuck. Divide the meat into 6 equal portions and form them into patties.
Place patties on the grill. Cook for 4 to 5 minutes per side for medium. Remove from heat and let rest 3 to 5 minutes before serving. Place the biscuits, cut side down, on the outer edges of the grill rack to toast lightly during the last
minute of grilling
To make the eggs:
Cook eggs over easy (place 1 tablespoon butter in large saute pan, break eggs into pan being careful not to break the yolk.
Add Salt and pepper and Saute over medium heat till the whites have set, then flip and cook an additional 15 seconds)
To assemble:
Spilt buttermilk biscuit in half. Add burger to the bottom half, top with a generous portion of the sausage gravy, then add the fried egg on to. Top with other half of biscuit and serve.
