485g beet juice (about 6 regular small red beets), reduce by 1/2
300g beet pulp
500g pickled corn
518g cooked pearl barley
205g red onion, minced
19g garlic, minced
165g potato starch
300g of tvp
9g smoked paprika
Salt to taste

Method:
Juice beets and reserve the pulp. Reduce beet juice by 1/2. Mix all ingredients together and add potato starch until desired consistency is reached. Build into 7Ounces patties.
Turmeric Aioli (Makes about 1 QT)
140g egg yolks
50g turmeric, peeled & minced
65g lemon juice
12g garlic
4g cayenne
Salt to taste
520g blended oil
Method:
Combine yolks, turmeric, lemon juice, garlic, cayenne in roboku, slowly add in oil to finish. Season to taste.
