Build a Better Burger 25th Anniversary Recipe: Lucky Tiki Burgers

Sutter Home Build a Better Burger Wine Pairing - Moscato
Lucky Tiki Burgers, made with ground turkey, won the Best Alternative Burgers prize in the 2010 Sutter Home Build a Better Burger Recipe Contest. Originally presented as sliders, this Asian-inspired recipe is equally irresistible in full-size form.
 
Prepared in 25 minutes or less, every bite of these burgers is made better with Sutter Home Moscato.
 
INGREDIENTS
SPICY HOISIN SPREAD
2/3 cup mayonnaise
3 tablespoons hoisin sauce
1 tablespoon Sriracha sauce
 
TIKI SLAW
1/3 cup very thinly sliced red onion
1/3 cup coarsely grated carrot
3 tablespoons coarsely chopped fresh cilantro leaves
2 teaspoons toasted sesame seeds
 

SLAW DRESSING
2 tablespoons rice vinegar
2 tablespoons water
1 1/2 teaspoons sugar
1/2 teaspoon salt
2 teaspoons Asian sesame oil
 
LUCKY PATTIES
1/2 cup panko breadcrumbs
1/4 cup minced green onion
2 teaspoons peeled and minced fresh ginger
2 cloves garlic, crushed
1 tablespoon reduced-sodium soy sauce
1 tablespoon Asian sesame oil
1 1/2 pounds ground turkey
 
6 sesame seed hamburger buns
Vegetable oil, for brushing on the grill rack
6 large bibb lettuce leaves
 
DIRECTIONS
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
 
To make the spread, combine all of the ingredients in a small bowl and blend. Cover and refrigerate.
 
To make the slaw, combine all of the ingredients in a medium bowl and set aside.
 
To make the slaw dressing, combine all of the ingredients in a medium bowl and whisk to blend. Add the dressing to the slaw and toss to combine. Cover and refrigerate.
 
To make the patties, combine all of the ingredients in a large bowl and mix gently but thoroughly. Form the mixture into 6 patties.
 
Brush the grill with vegetable oil. Place the patties on the grill, cover and cook, for 4 to 6 minutes per side. During the final 2 minutes of cooking place the buns, cut side down, around the outer edges of the grill to lightly toast.
 
To assemble the burgers, spread the cut surfaces of each bun with hoisin spread. Place a lettuce leaf on each bun bottom followed by a patty and equal portions of slaw. Add the bun tops and serve.
