Guacamole

Author of this month's book, Erin Duffy, gave us this guacamole recipe! Pair it with Sutter Home's Pinot Grigio.

Ingredients 

4 ripe Haas avocados
3-4 tablespoons freshly squeezed lime juice (1-2 limes depending on the size)
1 jalapeño, seeded and diced
1/2 cup of diced red onion (about 1 small onion)
1 teaspoon salt 
1/4 cup chopped cilantro, optional
1 medium tomato, seeded and diced

Instructions 

Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon. 

Immediately squeeze the limes on the avocados to prevent them from turning brown, then add the jalapeño, onion, salt, cilantro (if using), and mash to desired consistency using anything you can get your hands on. I have at varying times used a potato masher, a wooden spoon, a fork, or a pestle, it really doesn't matter!

Mash to desired consistency and stir on tomato. Taste for seasoning. Add lime and salt as desired. Serve with blue or white corn chips.
