Grilled Salmon with Mango Salsa

In All the Summer Girls, some of Dani’s favorite memories are of spending time at her father’s beach house in Avalon, New Jersey with her best friends Kate and Vanessa. Dani and her father and friends would grill fish on the deck overlooking the beach, and eat together under the stars.

The following grilled salmon with mango salsa recipes is one of my favorites – I love the freshness of tropical fruit paired with the slightly smoky, pure-summertime flavor imparted by the grill. And the recipe is so simple that I can easily envision it on Dani’s summer menu.


4 salmon fillets

1 tablespoon olive oil

Salt and pepper (to taste)

1 mango, peeled, diced

1 red pepper, diced

1 jalapeno, seeds discarded, diced

½ cup red onion, diced

2 tablespoons lime juice


Combine mango, red pepper, jalapeno, red onion, and lime juice in bowl and season with salt and pepper. Cover and let chill in fridge while preparing and grilling the salmon.

Coat salmon fillets with olive oil and season with salt and pepper. Grill on medium-high heat until opaque in center. Timing will vary depending on size of fillets (approximately 5 minutes per side). Top with salsa and serve. This dish is also delicious served cold for lunch.
