Pinot Noir – Bacon Burgers

Ingredients

1 lb ground chuck
1 lb ground sirloin
1/2 cup real bacon bits or chips
1 whole egg
2 tsp salt
1 tsp pepper

 

Instructions

(Best if you can buy chuck and sirloin whole and ask your grocer to grind them together coarse) 1. Warm the bacon bits in a skillet over medium-low heat to wake up their flavor. 2. Mix all ingredients in a large bowl, knead the meat gently with your fingers 3. Form patties about 1 inch thick, gently shaped. Don't press the meat. 4. Grill or pan-fry over medium high heat. Grill for about 3-4 minutes per side. Pan fry for 2-3 minutes per side. 5. Allow to rest, loosely covered, for 1 minute for juices to redistribute. Serve on toasted buns with a combination of sliced Swiss and Cheddar cheese, salt and pepper to taste.
