Chenin Blanc Chicken Piccata Burgers on Grilled Ciabatta Rolls

Ok, I am originally from the east coast and recently moved to the state of Iowa.The produce and meats here are incredible. This burger absolutely is sinfully tasteful and everyone will enjoy it. It can be served upscale or casual and will get compliments from everyone! This one is truly satisfying.

Ingredients:

Patties:
2 pounds ground chicken
3 tablespoons capers
1 chopped onion
4 garlic cloves minced
1 tablespoon olive oil
1 teaspoon sea salt
1 teaspoon pepper
1/4 cup fresh sage
1/2 teaspoon lemon zest
1 teaspoon lemon juice
4 tablespoons Sutter Home Chenin Blanc Wine
1 tablespoon seasoned Italian breadcrumbs

Arugala Salad

3 tablespoons Colavita Olive Oil
1 teaspoon lemon juice
1/2 cup shave Parmesan
1/2 teaspoon pepper
3 cups fresh wash and patted dry baby arugala
1/4 cup chopped basil

3 tablespoons of vegetable oil for brushing grill

6 thin slices of provolone cheese

6 ciabatta rolls sliced in half

Instructions:

Preheat grill to a medium high heat.

To prepare patties, combine, ground chicken, capers, onion, garlic, Colavita Olive Oil, salt, pepper, sage, lemon zest, lemon,juice, wine, and bread crumbs in a large bowl, handeling as little as possible. Shape into 6 patties to fit rolls. Cover with plastic wrap and set aside.

To prepare Arugala Salad, whisk olive oil, lemon juice, parmesan,and pepper in a large bowl. Set arugala and basil on top of dressing and do not mix until before topping burger to prevent wilting of salad.

Brush grill rack with vegetable oil

Place patties on grill and cook, turning only once about 6-7 min on each side or until cooked through. When burgers are almost finished grilling, top with provolone cheese, cover grill and melt. Towards the end of grilling, place rolls cut side down on grill rack and toast lightly.

To assemble burgers, place burger on bottom half of roll, add generous equal portions of arugala salad to burger, add tops of buns and serve.
