Wine Varietal: Pinot Noir
1 3/4 pounds ground beef
2 Johnsonville Beer Bratwurst, removed from casing
8 ounces yellow cheese curds, chopped to pea size
3 tablespoons gound mustard seed
6 tablespoons mustard seed
3/4 teaspoon ground pepper
3/4 pound medium cheddar cheese, grated
1/3 cup chives, finely chopped
3/4 pounds sauerkraut, drained
3 ounces Sutter Home Cabernet Sauvignon Wine
3 tablespoons butter
6 kaiser rolls, split
2 tablespoons canola oil, for brushing on the grill rack
Preheat gas grill to medium-high. Prepare a medium-hot fire in a charcoal grill, with cover.
To make patties, in a medium bowl hand mix the ground beef, bratwurst meat and cheesecurds. Combine the ground mustard seed and salt. Sprinkle over meat and cheese mixture. Hand mix until all ingredients appear evenly blended. Divide into six even patties. Smooth each the side of each patty.
Combine mustard seed and ground pepper. Place 1/6 of combined mustard seed and pepper mixture unto waxed paper spreading it out into a narrow line. Roll the side of one patty onto the mixture, pressing lightly, until edge is evenly covered. Repeat until all 6 patties are coated with a ring of mustard seed and pepper. Set aside.
To make the cheese mix, combine cheddar cheese and chives. Place in an aluminum foil pouch. Set aside.
To make kraut topping, place sauerkraut in a small bowl. Pour Sutter Home Cabernet Sauvignon Wine over the sauerkraut. Mix until sauerkraut takes on the color of the wine. Set aside.
Lightly butter the inside of each kaiser roll. Set aside.
When the grill is at the appropriate temperature, lightly brush the cooking surface with 2 tablespoons canola oil. Place patties on the cooking surface and cook 5 minutes on each side. Place aluminum foil pouch and rolls on top shelf of gas grill or outer area of cooking surface for charcoal grill. Check after 5 minutes to see if cheese mixture and rolls are done. Cheese mixture will be done when the cheese has melted. Rolls wiil be done when slightly toasted.
To ensemble the burger, place a patty on the lower half of the toasted Kaiser rolls, generously spread on cheese mixture and top with a dollop of the kraut topping. Add the upper rolls and serve.
