Wine Varietal: Pinot Noir
Love zucchini and asparagus and tried to see how i could pair it with my summer time favorite burger.
3/4 cup mayonnaise
1 tsp.sriracha hot chili sauce
1 tsp Mc Cormick smoke house maple seasoning
2 Tbs extra virgin olive oil
1 Tbs butter
1 medium candy sweet onion
1 Tbs red wine vinegar
1 Tbs brown sugar
1 tsp maple syrup
1/2 tsp smoke house maple seasoning
1/2 tsp kosher salt
1/2 tsp sriracha sauce
4 tbs extra virgin olive oil
12 oz fresh asparagus tips
12 oz zucchini cut in large match sticks
1 tsp garlic powder
1 tsp kosher salt
2 lb Angus ground beef (80/20)
6 oz finely diced pancetta
3 Tbs shaved parmesan
6 pretzel rolls
Turn on gas grill and pre heat to medium high.
Make mayo in small bowl mix all ingredients cover and refrigerate
Place medium iron skillet on grill .
Make topping add oil , butter and onion cook for 5 minutes, add vinegar,sugar,seasoning,salt and syrup.
Cook 5 minutes more.Remove pan from grill, add sriracha sauce. cover and set aside.
Make vegetable topping.Place a grill basket on grill to heat.
Mix vegetables with olive oil and seasonings pace in basket and cooking for 6 minutes until tender crisp. Remove from from grill cover and set aside.
Mix lightly ground beef, pancetta and cheese form into 6 patties.
Brush grill with oil.
Place patties on grill cook 5 minutes on each side to obtain a medium burger.
Split buns,place buns on grill to toast 2 minutes
Remove buns and burger patties.
Assemble Summer Burgers
Spread bottom of bun with sriracha mayo top with burger patties on each of the 6 buns place equal amounts of onion mixture and vegetable mixture..Add top bun.
Serve and enjoy!!
