Wine Varietal: Moscato
3 pounds ground beef
1/2 cup applewood-smoked bacon, cooked, minced
1/4 cup Tabasco Chipotle Pepper Sauce
1/4 cup minced shallots
1 teaspoon Kosher salt
1 teaspoon freshly ground black pepper
¼ cup Tabasco Chipotle pepper sauce
1 cup mayonnaise
6 provolone Cheese slices
6 Kaiser rolls
2 Large Avocado’s, peeled, pitted and sliced.
Combine burger ingredients in large bowl, mix lightly but thoroughly.
Divide and shape into six 1-inch thick patties.
Mix ¼ cup Tabasco Chipotle Pepper Sauce with 1 cup mayonnaise
Place burger on grill.
Cook to medium (160 degrees F) doneness, turning occasionally, approximately 5 minutes each side over medium heat on Grill.
Just before burger is done, top with 1 slice provolone Cheese and place each roll, cut sides down, on grill.
Cook until cheese is melted and roll is toasted.
Remove rolls and spread Tabasco Mayonnaise on each side of each roll.
Serve each burger in bun topped with 2 slices avocado.
