Wine Varietal: Cabernet Sauvignon
1/2 cup Colavita Olive Oil for brushing grill
Sauvignon Chipotle Sauce:
1/4 cup Sutter Home Cabernet Sauvignon Wine
2 tablespooons Tabasco Chipotle Pepper Sauce
1 tablespoon Colavita Olive Oil
1/2 cup Dijon Mustard
1/4 cup orange juice
1 tablespoon fresh lemon juice
1 tablespoon honey
1 teaspoon ground coriander
1 teaspoon garlic salt
1 teaspoon pepper
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon basil
2 pounds ground chuck hamburger
1 teaspoon onion salt
6 tablespoon Sauvignon Chipotle sauce
6 sesame seed hamburger buns
Preheat gas grill to medium high heat and 5 minutes before cooking grease grill by brushing most of 1/2 cup Colavita Olive Oil over grill rack, saving a little for brushing buns with later.
To make the sauce combine in a one quart saucepan Sutter Home Cabernet Sauvignon Wine, Chipotle Sauce, olive oil, egg, mustard, orange juice, lemon juice, honey, coriander, garlic salt, pepper, cumin, oregano, and basil. Set aside for later use.
In a large bowl combine hamburger, onion salt, and 6 tablespoons sauce from above. With hands form into 6 patties handling as little as possible.
When grill ready place the patties on the grill rack and cover and cook approximately 4-6 minutes on each side. While patties cooking, place sauce pan on grill stirring occasionally until sauce starts to boil. Remove and cover and save for burgers. While burgers cooking brush buns with olive oil and when burgers almost done place buns face down and cook for about one minute or until lightly toasted. Serve burgers immediately on buns. Dollop one tablespoon sauce over each burger. May serve open faced or with other bun. Yields 6 servings.
