Zinging Olive-Feta Stuffed Turkey Burgers, Sealed With Havarti

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

It is my hope to make a turkey burger that is healthy yet moist and flavorful…and loved by all.

Ingredients:

1/2 Cup Plain Greek Yogurt
1/2 Cup Sour Cream
1-1/2 Teaspoons Pinot Grigio Wine
1 Small Cucumber, Peeled, Seeded and Chopped
1 Green Onion
1 Garlic Clove
1/2 Teaspoon Lemon Zest
1/8 Teaspoon Ground Black Pepper
1/2 Teaspoon Salt

1-1/2 Pounds Lean Ground Turkey
1/4 Cup Finely Chopped Pimento Stuffed Green Olives
1/4 Cup Finely Chopped Large Black Olives
1/4 Cup Finely Chopped Kalamata Olives
3/4 Cup Finely Chopped Feta Cheese
1/2 Teaspoon Dried Oregano
1/2 Teaspoon Dried Basil
1/4 Teaspoon Salt
1/8 Teaspoon Ground Black Pepper

3 Tablespoon Olive Oil for oiling burger patties before cooking

2 Tablespoons Softened Salted Butter
6 Split Kaiser Rolls

6 Slices Medium Thick Havarti Cheese
12 Thin Tomato slices
24 Thin English Cucumber Slices
1/2 Cup Tzatziki Sauce

Instructions:

To Make Tzatziki Sauce:
Combine first set of 9 ingredients in food processor and pulse until smooth. Put in 3 cup bowl and set aside in cooler or freezer to chill until time to use.

To Make Burger Patties;
Combine 2nd set of 9 ingredients in 10 cup bowl for making burgers. Mix to just combine all ingredients, do not over mix. Form into 6 equally sized patties, place on plate and brush each patty top with olive oil. Cover with plastic wrap or foil and chill for 15 minutes while grill heats and you butter the buns.

Preheat gas grill for medium high heat.

Lightly butter each half of all Kaiser rolls.

Remove burger patties from refrigerator. Place each patty on grill oiled side down. Oil other sides of patties. Cook for approximately 6 minutes on each side, flipping once. Two minutes before burgers are done, put cheese slices on burgers to melt. Put buttered buns on grill to toast for 2 minutes.

To Assemble Burgers:
Put toasted bun bottom on plate and layer with 1 tablespoon tzatziki sauce, the cheese topped burger, 1 more tablespoon of tzatziki sauce, 4 slices of cucumber and 2 slices of tomato.
