Ingredients

Herb Butter-
2 Tablespoons finely chopped chives
1 clove minced garlic
1/2 teaspoon black pepper
1 stick salted butter
Teriyaki Onions-
2 thinly sliced onions
1 cup teriyaki sauce
1/2 cup worcestershire sauce
2 Tablespoons butter
Drizzle of Olive oil
2 pounds ground chuck or brisket
8 strips of bacon
4 slices pepper jack cheese
4 sesame seed buns

 

Instructions

Herb Butter- Place chives, garlic, pepper, and butter in small mixing bowl and beat until light and fluffy. Lay a 12 inch square piece of plastic wrap out and mound flavored butter in the center. Roll into a cylinder, twisting ends to compact the butter. Chill in the refridgerator until firm. To use, cut crosswise into 1/2 slices. Teriyaki Onions- Drizzle olive oil in a 10 inch non-stick skillet. To carmelize the onions, melt butter with the olive oil. Add onions, salt, and pepper and cook for 15 to 20 minutes over medium heat, stirring occasionally until carmelized. Then add teriyaki and worcestershire sauce and simmer on low for at least 1 hour (I like to put these in a small crock pot) and stir occasionally. Burger- Season with salt and pepper and mix lightly and form 4 large patties. Make a depression in the center with your thumb. Place a slice of the herb butter in the depression and mold the ground beef around the butter to encase it. Arrange the burgers on the grill. Test for completion with instant read thermometer to at least 160 degrees. Bacon- Fry 8 strips of bacon in fry pan until crisp and drain on a paper towel. During the last few minutes of cooking the burger, brush the cut sides of 4 sesame seed buns with olive oil and place them cut side down on outer edges of grill rack to lightly toast them. Also during the last 2 minutes of cooking, place a slice of pepper jack cheese on each burger til melted. To assemble the burger, place the burgers on grilled bun with melted cheese, top with teriyaki onion mixture, bacon, and mustard.
