Wings Over Texas Burger

Ingredients

3 CUPS CRUMBLED BLUE CHEESE
1 CUP SOUR CREAM
5 STALKS CELERY (ROUGH CHOP)
1 LARGE RED ONION CHOPPED MEDIUM (DIVIDED)
6 CLOVES OF GARLIC MINCED (DIVIDED)
1 ¼ TSP FRESH GROUND BLACK PEPPER BLEND (DIVIDED)
1 ¼ TSP COARSE SALT (DIVIDED)
2 LBS 80% LEAN GROUND BEEF
2/3 CUP HOT WING SAUCE (PLUS 6 TBSP FOR COATING BUNS)
6 WHOLE WHEAT KAISER ROLLS (SPLIT)
18 THICK SLICES TOMATO

Instructions

In a Medium Bowl, combine 1 1/2 cups Crumbled Blue Cheese, 1 cup Sour Cream, chopped Celery, 1/3 of the chopped Red Onion, 2 of the minced cloves of Garlic, ¼ tsp Black Pepper and ¼ tsp Coarse Salt. Stir to combine and refrigerate until needed. In a large bowl, combine Ground Beef, 2/3 of the chopped Red Onion, 4 of the minced cloves of Garlic, 1 tsp ground Black Pepper, 1 tsp Coarse Salt and 2/3 cup Hot Wing Sauce. Gently work the ingredients to blend without crushing the beef and divide into 6 equal balls (should be the size of a baseball). Take a ball of Ground Beef mixture and divide in half. Form each half into a patty slightly larger than the Kaiser Rolls; sprinkle one with ¼ cup Crumbled Blue Cheese and then top with the other half. Repeat with remaining portions of the beef mixture. Spray Grill Grates with Grill Spray and preheat Grill on High Reduce the Grill to Medium and place the burgers on grill; rotate ½ turn after 2 minutes and flip after another 3 minutes. Repeat with 2nd side and then remove to warming rack of the grill; reduce grill heat to low. Coat cut side of the rolls with ½ tbsp of Hot Wing Sauce and place sauce side down on the grill. Toast until lightly browned. To assemble burgers, place 3 tomato slices on the bottom of each bun. Top with grilled burger and 2 tbsp of refrigerated dressing. Finish with the toasted top bun and serve.
