Ingredients

1 whole onion(or 2 shallotsfor milder flavor)
2 cloves garlic
2 tblsp butter
1/4 cup olive oil
1/3 cup sutter homes merlot wine
2lbs ground beef
1lb ground pork
1/2 lb ground veal
1/3 cup chopped parsley
1/2 cup chopped basil
1 egg
1 small can tomato paste more wine (about 1/3 cup merlot sutter home wine)
1/2-to almost 1 cup(depending on ur tastes)grated perm/regiiano cheese
1 cup mayo
1/2 cup sour cream
1/2 cup ketchup
(arugala, tomato-to serve only if desired)
salt/pepper
chabbata bread/ any italian bread will do fine

 

Instructions

in frying pan place finley chopped onions(or shallots), and finley chopped garlic cloves with 2tbsp butter with 2 tsp of olive oil(so butter don't burn)saute' in pan. after its soft and carmelized add 1/3 cup of sutter home merlot wine let it cook out about 5 minutes, then drain on paper towel.add salt and pepper to taste after draining. let that sit. In mixing bowl combine ur ground beef, pork, and veal together add the chopped parsely and about 1/3 of basil, tomato paste, egg, grated cheese 1/3 cup sutter home merlot wine salt, pepper mix and make hambeuger patties brush each side of patties with olive oil(remainder olive oil) grill each side for 10 minutes or so In another bowl get sauce ready for the bread combine mayo, sour cream, whats left of chopped basil,3 tblspoons of sutter home merlot wine,and ketchup, salt and pepper to taste and mix spread on toasted ( only inside )chabbata bread (my choice) of u can use italian bread or foccacia bread it taste nice as well toast it till only warm though, we dont like hard bread so spread the sauce on bread on other half bread serve add ur arugala and sliced tomato place burger down close the breads and ur done.
