Whatta Wasabi Burger

I love wasabi. In addition to putting it in the burger mix and ketchup I also added it to the toasted buns. The burgers come out very flavorful and zesty without being overpowerfully hot.


2 lbs ground chuck
2 tbsp brown sugar
1 tbsp Chinese 5 spice powder
1+1/2 tbsp wasabi powder
2 tsp kosher salt
1 tsp chopped garlic
1 tsp white pepper
1 tsp ground ancho pepper
1 tsp ground coriander
½ tsp ground cardamom
Gingered cucumbers
1 large cucumber seeded & grated on box grater
2 tbsp rice vinegar
2 tsp brown sugar
1 tbsp vegetable oil
1 tbsp pickled ginger minced finely
Wasabi ketchup
1 cup ketchup
2 tbsp wasabi paste
1 tbsp mae ploy – thai sweet chili sauce
1 tsp soy sauce
1 tsp salt
½ tsp white pepper
6 golden egg bread sandwich buns
3 tbsp unsalted butter softened
1 tsp wasabi paste


Prepare a medium hot fire in a covered charcoal grill or preheat a gas grill to medium high. to make burgers, combine beef, brown sugar, wasabi, five spice, salt, garlic, white pepper, ancho pepper, coriander and cardamom. Mix well, divide into 6 equal portions and form into patties. to make gingered cucumbers, whisk together rice vinegar, brown sugar, vegetable oil. Add minced ginger and pour over grated cucumbers, mixing well. Set aside. to make Wasabi ketchup, mix ketchup, wasabi paste, chili sauce, soy sauce, salt an pepper together well. Reserve 1/3 cup for brushing on burgers. Set aside. Combine softened butter & wasabi paste toghether, spread on tops & bottoms of buns. When grill is ready brush grill with oil, and place patties on rack. Grill covered for 4 minutes and turn. brush patties liberally with reserved wasabi ketchup and grill covered another 4 minutes, placing buns buttered side down along edges of grill during last few minutes to toast. Remove burgers & buns from grill. To assemble. Place burger patties on bottoms of buns, top with generous amount of gingered cucumbers, and tops of buns. Serve with reserved wasabi ketchup. Makes 6 burgers.
