Ingredients

2 large cucumbers peeled,cut in half and sliced thin
1/4 cup white vinegar
1/4 cup extra virgin olive oil
8 tbsp Sriracha hot chili sauce
pinch of salt
1 cup Angel Hair coleslaw mix
3 tbsp Inglehoffer Wasabi horseradish
3 tbsp Kraft Miracle Whip
3 tbsp extra virgin olive oil
2 large white onions sliced thin
2 Beefsteak tomatoes sliced thin
2 packages Sargento Deli Style Chipotle and Cheddar Cheese slices
2 packages Aunt Millie’s Hearth Classic Kaiser Buns (these have a little cornmeal sprinkled on top) lightly toasted and brushed with extra virgin olive oil
3 lbs ground beef 80/20
3 small (4.5 oz) cans Old El Paso chopped green chili peppers
9 tbsp Colgin Hickory Liquid Smoke
6 tbsp Sriracha hot chili sauce
2 tbsp salt
1 tbsp ground black pepper
3 cups Luhr Jensen Mesquite Smoking Chips
1 cup Luhr Jensen Apple Smoking Chips
2 cups water

 

Instructions

PREP: Marinade the thin cucumber slices in 1/4 cup white vinegar,1/4 cup extra virgin olive oil and 8 tbsp Sriracha hot chili sauce for 2 hours. Next we mix 1 cup Angel Hair coleslaw mix with 3 tbsp Inglehoffer Wasabi Horseradish,3 tbsp Kraft Miracle Whip and 3 tbsp extra virgin olive oil in a bowl to be set aside. MIXING THE PATTIES:Add to the 3 pounds of ground beef 80/20 the 3 cans Old El Paso chopped green chili peppers,9 tbsp Colgin Hickory Liquid Smoke,6 tbsp Sriracha hot chili sauce, 2 tbsp salt and 1 tbsp ground black pepper.I use a patty mold to shape the mixture into patties,brush extra virgin olive oil on both sides of the patties and place them on wax paper. GRILLING THE MEAT: I use a 35 year old Kenmore Gas Grill with 2 burners and 2 grates.combine the Mesquite and Apple Smoking chips in a small pot with the 2 cups of water. Put the pot on the Lava rocks and get the grill as hot as possible.When the wood chips start to smoke, place the patties on the grill to sear for 1 minute and flip the patties over to sear the other side for 1 minute. Shut of the burner on the burger side and turn the wood chip side down low. Place the burgers on the upper rack above the wood chips and let them smoke until the hamburger patties are nearly well done.Place 2 cucumber slices atop each burger and 1 slice Sargento Chipotle Cheddar cheese slice on top of the cucumber slices to be melted.While waiting for the cheese to melt ,lightly toast the Kaiser buns and lightly brush them with the extra virgin olive oil. ASSEMBLING THE WASA CHILI HAMBURGER: On the bottom bun place the patty,1 slice white onion,1 sliced lightly salted Beefsteak tomato. on top of all this ,spread a forkful of the Wasabi coleslaw mix. put the top on the bun and enjoy.
