Waldorf Relished Chicken Burgers with Avocado-Cheese Spread

Ingredients

1/4 cup apple jelly
2 tablespoons cider vinegar
1/2 cup olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
4 Granny Smith apples, peeled, cored, finely diced
3/4 cups finely chopped celery
3/4 red seedless grapes, sliced
1/2 cup finely chopped red onion
1 (8 oz) package cream cheese
1 avocado, seeded, peeled and mashed
1 tablespoon fresh lemon juice
1 teaspoon Cajun seasoning
2 pounds ground chicken
2 tablespoons fresh lemon juice
2 teaspoons kosher salt
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
Vegetable oil, for brushing on the grill rack
6 hamburger buns, split

 

Instructions

Preheat a gas grill to medium-high.

To make the Waldorf relish, in a medium bowl, whisk together the apple jelly, cider vinegar, olive oil, lemon juice, salt and pepper. Add the apples, celery, grapes and red onion. Stir to combine. Refrigerate until ready to serve.

To make the avocado-cheese spread, mash the cheese and avocado with a fork in a small bowl. Stir in the lemon juice and Cajun seasonings. Cover and refrigerate until ready to serve.

To make the patties, combine the chicken, lemon juice, salt, mayonnaise, and Cajun seasoning in a large bowl. Mix well, handling the meat as little as possible to avoid compacting it. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, just until the juices run clear when the patties are pierced in the center, about 4 minutes on each side. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.

To assemble the burgers, spread the avocado-cheese spread over the cut sides of the bread. On each bread bottom, place a patty and an equal portion of the relish. Add the bread tops and serve.
