Tuscan Spinach and Feta Cheese Burgers with Merlot Mayonnaise

This recipe is easy to make right before the guests arrive and all the greens and cheese are in the burger so assembly is really easy! It is a gourmet burger that is healthy and rich at the same time.

Ingredients 

Tuscan Spinach and Feta Cheese Burgers with Merlot Mayonnaise Merlot Mayonnaise
¾ cup of mayonnaise
4 tablespoons Sutter Home Merlot wine
1 teaspoon of kosher salt
1 teaspoon freshly ground white pepper
Burgers
3 pounds fresh ground chuck (24% fat)
12 ounces crumbled herbed feta cheese
1 1/2 cup baby spinach, finely chopped
5 teaspoons kosher salt
3 teaspoons freshly ground black pepper
4 cloves garlic minced
4 teaspoons Worcestershire sauce
1 cup of chopped white onion
4 teaspoons Grey Poupon Dijon mustard
Final Assembly
Vegetable Oil, for brushing grill
2 large plump tomatoes
6 Focaccia bread burger buns (they are usually found in square shape oversized roll - cut in half from side to side to make burger bun)
6 tablespoons Colavita Olive Oil – 1 tablespoon per burger bun

Instructions 

Directions Preheat outdoor charcoal or gas grill to medium-high heat. HENESEY – PAGE 2 To make mayonnaise, combine mayo, wine, salt and pepper in a medium bowl and mix with a spoon by hand. Cover and refrigerate until serving. To make burger patties, place ground chuck in large bowl, and then add feta, spinach, salt, pepper, garlic, Worchester sauce, onion, and Dijon mustard. Using cold hands quickly combine all ingredients being careful not to handle meat too long. Divide and form mixture into 4 equal plump patties. Brush heated grill with vegetable oil. Place patties on the rack, cover, and grill for 4 minutes until you can see black grill marks on bottom of patties. While cooking, slice tomatoes into 1/4 inch thick slices. Turn the patties over and continue grilling until done to preference, 3 minutes for rare (my favorite) or 4(medium) and 5 minutes for those southern folks who like everything fried to a crisp. While sipping on some wine and waiting for the last few minutes to grill, brush the cut side of the bread with olive oil and place brushed side on grill and toast until you see light brown grill marks on bread. Remove patties and buns from grill. To make burgers, spread desired amount of mayonnaise on cut side of each piece of bread, place patty on cut side of bottom piece of bread, place 2 tomato slices on each patty, then place top piece of bread, cut side down on top of each patty. Serve immediately Makes 6 burgers

Can be served with Kettle brand Tuscan Three Cheese Chips and that bottle of Sutter Home Merlot wine you opened to make the mayonnaise! PS: The rules said for no side items, so I didn't include this in the ingredients or directions. The wine and chips just add to the Tuscan flair!
