Turkey Hot Sausage Burgers
Turkey hot sausage combined with ground beef in pasta sauces is wonderful. Although the community I live in would prefer traditional southern soul food, all year, but especially in the summer there is nothing like grilled hot sausages and grilled burgers. Because I try to not eat as much pork, I find that turkey hot sausages are a great alternative. Although they are generally slow simmered with loads of onions, peppers, garlic & a splash of red wine vinegar, why not combine them with some ground chuck. It produces a spicy, easy, & economical American burger.
1 Package (5/per pack) Purdue turkey hot sausages or 1-1/2 pound of bulk turkey hot sausage
3/4 pound of ground chuck
2 tablespoons Merlot wine
2 tablespoons each (minced red onion, minced green or red bell peppers, and minced portabella mushrooms)
1 tablespoon each (ketchup, mustard--brown or yellow) and mayonnaise
6 teaspoons of Mozzarella or Provolone shredded cheese
6 Slices of Provolone or Mozzarella Cheese
3 Slices of New York Cheddar (cut diagonally in 6 pieces)
6 Kaiser buns
Leaf lettuce, sliced red onion, beef steak tomato (6 slices each)
1-2 tablespoons olive oil
Prepare a medium hot fire in a charcoal grill with a cover or preheat gas grill to medium high;
Combine hot sausages (casing removed) & ground chuck; mix gently;
Add wine, onions, peppers, mushrooms, ketchup, mustard & mayonnaise & mix gently;
Form into 1-inch thick patties, making indentation in center; add 1 teaspoon of mozzarella or provolone to each; then form pattie around cheese;
lightly brush grill rack with olive oil, & when at correct temperature; place burger patties and cook 6-8 minutes on each side for well done; 4 minutes for medium;
When done to your likeness, add sliced Mozzarella or Provolone and then diagonal slice of New York Cheddar until slightly melted;
Place lettuce on bun and then burger, top with tomato & onion. Feel free to serve with additional ketchup, mayonnaise & mustard as condiments.
