Turkey Club Burger

This healthful burger has all the great flavor of a turkey club sandwich and is great for grilling get togethers. The sandwich looks and tastes like a turkey club, but with a great grilled flavor.

Ingredients 

FOR THE BURGERS:
1 1/2# ground turkey
1/2# ground chuck
2 tea salt
1 tea pepper
FOR AVOCADO MAYO:
1 1/2 C mayo
1 ripe avocado
1/2 tea salt
2 TBL lemon juice
1/4 tea Cayenne sauce
ALSO:
12 strips thick cut bacon
6 large slices ripe tomato
12 greenleaf lettuce leaves
12 slices brioche, crusts removed

Instructions 

To make the burgers combine turkey, beef chuck, salt and pepper. Shape into 6 equal SQUARE patties (to fit on the square Brioche bread.) To make the avocado Mayo, use a fork to smash the avocado with the lemon juice, salt and hot sauce until a chunky paste is formed. Add the Mayo and mix well. Grill the bacon until crisp. Remove crusts from the Brioche and lightly grill to toast. Grill burgers on medium high heat until done throughout. This will take aprox. 5 minutes per side. To assemble: Cut the Brioche aprox. the same size and shape of the cooked burger patties. Place 3 T of the avocado Mayo on 6 of the Brioche slices. Place 2 lettuce leaves on the Mayo and then place a large tomato slice on the lettuce. Lightly salt and pepper the tomato. Top with a burger and then place 2 slices of bacon on each burger. Spread 2T avocado Mayo on the remaining 6 slices of Brioche and top the sandwiches. Cut each burger sandwich in half and place a toothpick into each half of burger.
