Tomatilla Topped Tail Torcher Burgers

Ingredients

Tomatilla Salsa
4 medium tomatillas
3 T white onion
2 cloves garlic
1 jalepeno
2 T fresh cilantro
1 t salt
Patties
1 small white onion
2 jalepenos
1 serrano
2 T cilantro
2 T salt
2 t cumin
1 t adobo seasoning
1 T bottled hot sauce
juice of one lime
2 lb. ground round
Cooking Spray for spraying the grill rack
6 wheat Kaiser Rolls
6 slices Pepper Jack cheese
6 large leaves of red cabbage

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make Tomatilla Salsa, combine all ingrediants, roughly chopped into a food processor. Mix well until finely chopped and fully combined. Refrigerate until serving. To make the patties, combine onion, jalepenos, serrano, and cilantro in food processor. Mix well until finely chopped and fully combined. Add salt, cumin, adobo seasoning, hot sauce, and lime juice. Stir until well combined. Add meat to a bowl and mix by hand until well blended. Let this mixture rest in refrigerator for 30 minutes before forming into patties. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. spray the grill rack with cooking spray. Place the patties on the rack, cover, and grill until browned on the bottoms, 3 to 4 minutes. Turn the patties and continue grilling until done to preference, about 5 minutes longer for medium. During the last few minutes of cooking, carefully place the wheat kaiser rolls, cut side down, on the outer edges of the rack to toast lightly. Add one slice of pepper jack cheese to each burger approximately one minute before removing from the grill. To assemble the burgers, place a generous portion of the tomatilla salsa on the bottom of the roll. Place patty on top of the salsa. Repeat layer of tomatilla salsa on top of cheese topped patty. Place leaf of red cabbage on top of layers. Add the roll tops and serve. Makes 6 burgers.
