1/4 tsp. black pepper
12 oz. finely chopped smoked duck breast
3 tbsp. Savory Honey Grey Poupon
20 oz. ground turkey
2 1/2 oz. trinity mix (diced celery/onion/green pepper)
1 tbsp. rubbed sage
1/4 tsp. seasoned salt
1/4 tsp. black pepper
1/4 tsp. red pepper flakes
1 large egg
2 tbsp. bread crumbs
4 tbsp. Colavita Extra Virgin Olive Oil
Spinach Salad:
1/4 cup Organic Ville orange cranberry vinaigrette
1 tbsp. mayonnaise
1 1/2 tbsp. lemon juice
1/4 tsp. seasoned salt
1/4 tsp. black pepper
3 oz. bagged baby spinach
6 sandwich potato rolls
3 tbsp. whole berry cranberry sauce

Instructions

Carefully prepare a medium-hot flame in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To assemble The Only Turducken Burger patties, mince rosemary and combine with chicken, seasoned salt and pepper in a medium sized bowl. Shape into 6 equally sized chicken meatballs. Remove skin and finely chop duck breasts, being certain to remove cartilage. Combine finely chopped duck and Savory Honey Grey Poupon in a medium sized bowl. Mix Well. Shape into 6 equally sized duck patties. Place chicken meatballs in center of duck patties, and reshape by wrapping duck around chicken meatballs. In a large bowl, combine turkey, trinity mix, sage, seasoned salt, black pepper, red pepper, egg and bread crumbs. Shape into 6 equally sized turkey patties. Place duck-wrapped chicken meatballs in center of turkey patties, and reshape by wrapping turkey around duck-wrapped chicken meatballs. Thinly coat with Colavita Extra Virgin Olive Oil as you hand shape 6 Turducken Burger patties.

Once the grill is ready, carefully brush grill with Colavita Extra Virgin Olive Oil. Place Turducken Burger patties on the grill, cover, and cook, turning once, until done to preference, around 7 minutes per side for how I like them.

To prepare the salad, in a medium bowl whisk briskly orange cranberry vinaigrette, mayonnaise, seasoned salt and pepper. Toss spinach, coating with dressing.

To assemble Turducken Burgers, place equal amounts of spinach salad on each potato roll bottom, follow with Turducken Burger patty and an equal portion of whole berry cranberry sauce. Add the potato roll top and serve.
