The MAS Burger

This burger was invented when my husband and I decided to be more "adventurous" on the grill this summer. While doing my grocery list one night, I asked him what he really had a taste for. When he announced that it was a burger, we knew that it was time to come up with something a little more creative than just the meat. Hence, our "MAS" burger was born. The name is an acronym for mushroom and swiss, but its meaning says it all. Mas is the Spanish word for more, and one taste of this burger and you will be begging for more! Enjoy!


1-2 tablespoons olive oil
1/2 red onion, chopped
1/2 lb. sliced mushrooms
1 lb. ground beef
1 tblp. fresh thyme, chopped
1 tblsp. fresh parsley, chopped
1 egg, beaten
1/2 cup fresh bread crumbs
1/4 lb. swiss cheese, cut into small pieces
4 Brioche buns
1/2 cup creamy dijon mustard
2-3 tblsp heavy cream
red leaf lettuce


Heat olive oil in saute pan. Add onions and mushrooms. Saute until golden brown, sprinkling with salt, sugar and pepper right before finishing. Set aside to cool slightly. In a bowl, mix together beef, thyme, parsley, egg, bread crumbs and sprinkle with salt and pepper. Form into four patties with a well in the middle. In each patty spoon a 1/2 of the mushroom/onion mixture and 1/2 of the swiss cheese. Form the burger around the mixture, closing at the top. Grill until desired doneness. Warm buns on heated grill. Mix mustard with heavy cream until thick and creamy. Sprinkle with salt and pepper. On each half of each of the buns, spread with mustard mixture. Add, burger, top with a lettuce leaf. ENJOY!


This burger is delicious medium rare, medium or well done!
