The Mango Jerk Burger

Sometimes you need an escape from the long New England winters.Nothing like the flavor of the Carribean to do the trick.

Ingredients:

Burger Relish:

2/3 c. diced mango
1 tbs. fresh lime juice
1/2 c. chopped green onion
2/3 c. diced red bell pepper

Burger Ingredients:

2 lbs. 80% ground beef
2 tbs. finely chopped habanero pepper (seeded)
3 tbs. finely chopped yellow onion
2 tsp. Kosher salt
1 1/2 tsp. ground thyme
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 tsp. ground black pepper

Other ingredients:

vegetable oil for brushing grill rack
6 plain Kaiser rolls (sliced in half)
1 head green leaf lettuce

Instructions:

Preheat gas grill to medium-high.

Combine mango and lime juice, then add green onion and red bell pepper. Set aside.

Combine beef, habanero, yellow onion, salt, thyme, cinnamon, allspice and black pepper. Divide into 6 equal portions. Hand shape portions into patties that are the same width as the rolls.

Brush grill rack with oil and grill patties for 4-6 minutes a side. Flip patties only once. Place rolls on grill (cut side down) during the last minute of grilling. Rolls should be lightly toasted.

Assemble burgers by placing 3 layers of lettuce on bottom half of rolls. Next add the patties, then top each patty with an equal portion of the relish. Add top half of roll, cut in half and serve.
