The Kiss me, squeeze me apple pie with cheese, pretzel-crusted, spiced cream, bacon, jalapeno, ginger- beef burger

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients

2 pounds ground chuck
1 teaspoon sea salt
1/2 cup packaged , pre cooked bacon pieces (not bits)
1 tablespoon toasted sesame oil
2 cloves of garlic
1/4 cup red bell peppers, finely chopped
1 tablespoon freshly grated ginger
1/4 cup Sutter home Cabernet Sauvignon
2 tablespoons natural brewed soy sauce
1/2 cup granny smith apple, cored but skinned, diced
9 slices of Vlasic pickled jalapeno slices, finely chopped (colavita olive oil to to brush grill)
6 pats unsalted butter softened
1 teaspoon lemon zest, freshly grated
6 tablespoons finely-crushed , Snyders of Hanover unflavored pretzels but salted
3 tablespoons maple syrup
6 large egg buns split open
6 tablespoons prepared, unsweetened apple sauce
6 bun sized slices of good quality extra sharp cheddar cheese pre sliced
6 tablespoons good quality sour cream
1 teaspoon pumpkin pie spice

 

Instructions

Prepare a medium hot charcoal grill with a cover or pre heat a gas grill to medium high

To make patties:In a large bowl combine the chuck, salt, bacon,sesame oil, garlic, red bell pepper, ginger, Cabernet Sauvignon, soy sauce, apples and jalapeños. Handling as little as possible, form 6 bun sized , flattened patties, Cover with plastic wrap and set aside.

When grill is ready, brush rack with Colavita olive oil. Place patties on rack and grill , cover down, turning once, 5-7 minutes on each side for medium done.

To prepare pretzel crust: Place softened butter in a small bowl . Grate lemon zest and add to butter. In a small grinder or mini food processor, grind or crush pretzels to yield 1/2 cup. Add pretzels to butter lemon mixture then add maple syrup and stir together with a spoon.

When burger are about 2 minutes from being done place buns, split side down, on the outer edges of the grill to lightly toast them.

When burger are 1 minute from being done, top each burger with equal portion of pretzel crust. Then top each with 1 tablespoon of applesauce and 1 slice of cheddar and put cover down to allow cheese to melt a bit.

While cheese is warming, in a small bowl place sour cream and stir a small bowl, pie spice to make spiced cream tapping.

When ready remove buns from grill , plate bottom halves, top each with a burger, spoon each burger with equal portions of spiced cream and cover with top of bun.
