The Kauai BB Burger

We first had Beef/Buffalo hamburgers in Kauai and really enjoyed them, we've been eating them ever since. I've adapted/improved on the recipe and here it is.(I named it The Kauai Beef/Buffalo Burger in honor of our 'first' time.

Ingredients 

1 lb. ground chuck
1/2 lb. ground Buffalo 
Greek Seasoning
1 tblsp. olive oil
1/2 red onion (sliced)
6 sourdough Kaiser rolls (sliced in 1/2) 
Raspberry Salsa
baby Spinach leaves
3 oz. garlic/herb cheese 
Merlot Wine Steak Sauce

Instructions 

Mix the first 3 ingredients, form into (6) patties with an indentation in the center of each one and set aside. Add olive oil to a hot cast iron skillet, immediately add sliced onions and fry/grill them to a golden brown. While frying onions, move them to one side of the skillet and 'toast' rolls. Set both aside. Then place patties on a hot grill, cook to a 'medium' (approximately 4 minutes on each side) - set aside. Place toasted roll 'set' (face side up) on plate, 'dollop' bottom half of roll with salsa, add spinach leaves, top with beef patty ('well' side up), insert 1/6th of the cheese into indentation, add grilled onions, drizzle steak sauce onto the onions and top with other 1/2 of the roll.

Merlot Wine Steak Sauce can be substituted with regular Steak Sauce.
