The Jersey Diner Burger (Taylor Ham-burger, Egg, and Cheese, on a Hard Roll)

Ingredients

Maple Butter
½ stick of butter
2 tablespoons of maple syrup

Ketchup Mayo Spread
½ cup mayonnaise
2 tablespoons and 1 teaspoon of ketchup

Patties
1 ½ pounds of ground beef
1/4 cup maple syrup
2 teaspoons of salt
cracked black pepper to taste

6 large eggs
6 slices of Taylor Ham pork roll or brand of pork roll that is available in your supermarket
9 slices of American cheese
6 large Kaiser rolls
Pam cooking spray
Salted butter
vegetable oil for brushing the grill

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

FOR THE MAPLE BUTTER: Mix the butter and syrup with an electric mixer until well blended. The final product will have a whipped texture. Chill.

FOR THE KETCHUP MAYO: Mix two ingredients in a small mixing bowl and chill.

FOR THE HAMBURGER PATTIES: Combine all four ingredients in a mixing bowl and blend. Shape mixture into six ½ inch thick patties and set aside.

FOR THE TAYLOR HAM AND FRIED EGGS OVER-EASY: Place a fire-proof skillet onto the grill. Spray skillet with Pam cooking spray. Take six slices of Taylor Ham and cook until the ends turn up and the ham resembles a small bowl. Remove from skillet and place in foil wrap to keep warm. Re-spray the skillet with Pam and add 1 tablespoon of butter. Once the butter has melted completely, begin frying the eggs. Cook eggs first, sunny-side up for about 2 minutes, or until the egg white is almost fully cooked. Adding more butter if necessary, gently flip the eggs and allow them to cook on the other side for about another minute or so, or until it appears that the white is entirely cooked, but the yolk is still runny. ENSURE THAT YOU DO NOT COOK THE YOKE COMPLETELY and that it remains in almost liquid form. Once eggs are fried, remove from grill and cover with foil to keep warm.

FOR GRILLING: Immediately after removing the skillet from the grill, prepare it for burgers by brushing with vegetable oil. Place patties on the rack and cover the grill. Cook burgers to desired doneness, turning them once, about 4-6 minutes on each side for medium-rare to medium. If desired, during the last few minutes of cooking, place the Kaiser rolls, cut side down, on the outer edges of the rack to toast lightly. Immediately after removing the burgers from the grill place 1 ½ slices of American cheese on each burger.

ASSEMBLING THE BUGER: Butter both halves of the Kaiser roll with maple butter. On the bottom half of the roll, place cheese topped burger. Layer with fried egg, followed by a slice of Taylor Ham, and finally top off with ketchup mayo. Combine the two halves.
