“THE ITALIAN JOB” BURGER WITH PROVALONE AND GRILLED SWEET PEPPERS

Ingredients

FOR PATTIES:
1 1/2 pounds ground chuck
1/2 pound mild italian sausage
3/4 cup "Tasso's Bruschetta Olivara"
3/4 cup "Guilana Sun Dried Tomato Julienne", chopped
1/3 cup fresh basil, minced
1/3 cup fresh oregano, minced
3 tablespoons Grey Poupon Country Mustard
2 large shallots, minced 4 cloves garlic, minced
1 1/2 teaspoons kosher salt
Colavita olive oil for moistening hands
FOR GRILLED SWEET PEPPERS:
2 large sweet red peppers, seeded, deveined and cut into 2"-3" pieces
2 large sweet yellow peppers, seeded, deveined and cut into 2"-3" pieces
1/4 cup Colavita Extra Virgin Olive Oil
1 teaspoon kosher salt
6 ciabiatta rolls
Basil infused olive oil for brushing on ciabiatta rolls
Colavita Olive Oil for brushing grill
8 ounces Provalone, sliced

 

Instructions

TO PREPARE PATTIES, combine ground chuck, sausage, brushetta, sun-dried tomatoes, basil, oregano, Grey Poupon, shallots, garlic and salt, being careful not to overhandle meat to avoid compacting, Divide into 6 equal portions. Moisten hands with olive oil and form 6 patties. Patties should be large enough to fit ciabatta rolls and at least 1" thick. Place patties on plate. Cover and refrigerate. TO PREPARE GRILLED SWEET PEPPERS, place all pepper pieces in bowl. Add olive oil and salt. Mix to lightly coat each piece. Place pepper pieces on vegetable grilling rack and place directly on medium grill. Grill, turning occaisionally until blackened and tender, (about 8-10 minutes). Place grilled pepper pieces in plastic bag. Seal and cover bag for 10 minutes. While waiting, slice ciabatta rolls and brush each cut side with basil infused oil. Place on plate and set aside. When 10 minutes has past, open plastic bag and peel blackened skin off pepper pieces. Place peeled pieces on plate. Cover and set aside. TO GRILL PATTIES, remove patties from refrigerator and place directly on hot grill. Cover and grill for 5 minutes. Gently turn patties and continue grilling an additional 6-8 minutes or until internal temperature reads 160 degrees for medium. During the last 2 minutes of grilling, place equal amounts of provalone on each patty to melt, then place prepared ciabiatta rolls, cut side down on grill to toast. Watch carefully to avoid burning. Remove patties and rolls from grill. TO BUILD BURGERS, place pattie on cut side of bottom half of each ciabatta roll. Place equal amounts of grilled peppers atop each patty. Place top halves of ciabatta rolls, cut side down, atop peppers. Serve and enjoy! Makes 6 patties Marilyn Wagner, Buffalo Grove, IL
