The Everything Sweet And Sour Burger

Ingredients

Marinade
1/3 cup of soy sauce
 2 tbsp of water
2 1/2 cloves of minced garlic
1 tbsp of dark brown sugar
1 1/2 tbsp fine granulated sugar
Sauce
1/2 cup of ketchup
1/4 cup of Dijon mustard
1 tsp hot sauce
1 tsp balsamic vinegar
1/2 tsp dark brown sugar
1/2 tsp fine granulated sugar
Patties
2 1/2 pounds ground sirloin
2 tsp salt
1 tsp black pepper
1 tsp ground all-spice
1 tsp fine granulated sugar
vegetable oil, for brushing on the grill rack
6 slices natural Colby and Monterrey jack cheese
6 slices classic American cheese
12 slices black label bacon (maple flavor)
6 romaine lettuce leaves
6 1/8 inch thick red onion slices (separate rings)
12 1/4 inch thick ripe vine tomato slices
6 Everything bagel bread squares

 

Instructions

Directions Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make marinade, combine soy sauce, water, minced garlic and dark brown sugar in a bowl. Whisk to blend well. Add granulated sugar. Whisk well and refrigerate until patties are prepared. To make sauce, combine ketchup and Dijon mustard in a bowl. Whisk to blend. Add hot sauce. Whisk to blend. Add balsamic vinegar. Whisk to blend. Add dark brown sugar. Whisk to blend. Add fine granulated sugar. Whisk and blend well. To make patties, heat small fire-proof skillet on the grill rack. Add the black label bacon, cook until done all the way through, about 5 minutes. Remove skillet from heat and set aside. Remove bacon from skillet and place on a paper towel. Combine the sirloin, salt, black pepper and ground all-spice in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the bagel bread. Spread the patties out onto a large plate or cookie sheet. Sprinkle the granulated sugar on both sides of each patty. Remove marinade from the refrigerator, whisk briefly and drizzle over each patty evenly. Cover and refrigerate a minimum 30 minutes. When 30 minutes is up and grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 minutes on each side for medium. During the last few minutes of cooking, place the bagel squares, cut side down, on the outside edge of grill rack until lightly toasted. In the last minute of cooking, top each patty with a Colby and Monterrey jack combo cheese slice. To assemble the burgers, spread the sauce over the cut sides of the bagel squares. On each square bottom, place a lettuce leaf, a slice of American cheese, a patty, two slices of bacon, , two slices of tomato, and an onion slice. Add the square tops, serve and enjoy!
