The Divine “Mmmm” Burger with Balsamic Sauce

Ingredients

Balsamic Sauce:
¼ cup Balsamic Vinegar
¼ cup Strawberry Preserves (no sugar added)
2 tsp Honey
Mascarpone Cheese Topping:
½ lb Italian Sausage
¼ lb Ground Veal or Beef
½ cup White Wine
¾ cups Parmesan Riggano
12 oz Mascarpone or Cream Cheese
1 medium sized onion chopped
2-3 cloves of Garlic minced
½ lbs Mushrooms sliced
¼ cup Milk
Salt to taste Pepper to taste 
seasoning to taste
Patties:
2 lbs of Freshly Ground Beef
3 cloves Fresh Minced Garlic
¼ cup chopped Red Onion 2
½ tsp Sea Salt, or to taste
1 TBS Freshly Ground Pepper, or to taste
½ cup Milk
1Egg
3 TBS combination of Fresh Oregano & Basil
Parmesan Riggano
Olive Oil (Extra Virgin) for sautéing
Vegetable oil, for brushing on the grill rack
Any type of Italian Bread cut and split (approx 4X4)
Mayonnaise
Avocado slices
1-2 large Tomatoes sliced
Romaine Lettuce leaves
6 slices of Provolone or Mozzarella Cheese (optional)

 

Instructions

For Balsamic Sauce: In small bowl add the vinegar, preserves and honey together and mix. Set aside for latter. For the Topping: Add chopped onion to a skillet and cook on medium heat, sauté with the Olive Oil until translucent. Then add the remaining garlic. Use olive oil as needed. Add mushrooms and halt the white wine, sauté them with the onions and garlic, as needed 5-6 minutes. Move to a large bowl, set aside. Then to the same skillet, add Italian sausage and Ground Beef, and remaining wine, be sure to crumble the meat while cooking. Drain out the excess fat and put into mixing bowl. Allow mixture to cool slightly. Then add the mascarpone or cream cheese. Mix, and set aside covered with foil to help keep warm. For Burger Patties: In a large bowl add the ground beef, sausage. Do not mix yet, but continue to add the sea salt, pepper and White Wine to meat. Next drop in the remaining ingredients as listed. Now mix the meat with your hands make into six patties. Set aside to cook on the grill. Prepare the grill to a med high heat, brush with vegetable oil to reduce sticking. Place the burger patties on the grill cook to a medium rare or to slightly pink inside. Top with a slice of cheese if desired and slightly melt. Once finished with the patties set aside to rest for a few minuets While waiting on the Meat, toast Bread on the grill only on the inside of the buns, 1-2 min. Once you have completed the rolls add a patty and top with a large scoop of topping, dress it then with a few spoons full of Balsamic sauce and dust with parmesan cheese. Add the final bread top and serve. Serves six.
