"The Cinco de Mayo Tex-Mex Fiesta Special Cheese-Burger"
I wanted this burger to be a true Tex-Mex burger to grill for some friends of Mexican heritage for Cinco de Mayo. I prepared it for our Friday Fling Group. We meet every Friday from April to September for dinner and socializing. My wife and I have the 3rd Friday. Y'all come join us, we have just one rule, BPOSHW*, see below. The group gave it their stamp of approval. I prepared it for our Hispanic friends and they really love it, so I thought I would share it with you.
2 1/2 pounds fresh ground Chuck, 73/27
1/2 cup Sutter Home Merlot
2 1/2 tablespoons Bolner's* Fiesta Brand Taco Seasoning
1/2 cup Pace** Sliced Jalapeno, drained and diced
Vegetable oil for brushing the patties or grill
1 1/2 cups Tostitos*** Medium Monterey Jack Queso
*Bolner's Fiesta Brand Spice and Blends Company is the leading authentic Mexican spice supplier based in San Antonio Texas. Their products can easily be purchased online.
** Pace is also located in San Antonio, Texas, another quality local Texas product.
*** Tostitos Brand products, a division of Frito Lay, Plano, Texas, ditto.
Fiesta Burger Roll Spread
3 tablespoons Old El Paso Refried Beans
3 tablespoons Pace Taco Sauce
3 tablespoons sour cream
3 tablespoons Fritos Corn Chips, crushed
6 fresh baked Ciabatta rolls
6 tablespoons butter, softened to room temperature
1 1/2 cups shredded Iceberg lettuce
1 1/2 cups diced fresh white onions
1 1/2 cups diced fresh ripe red tomatoes
1 1/2 cup fresh diced Avocado
Prepare a gas grill to a medium high heat.
In a large bowl gently blend together the ground Chuck, with the wine, taco seasoning, and peppers. Gently form 6 patties slightly larger than the rolls. Spread the vegetable oil on the patties or grill. Place the patties on the grill for 4-5 minutes, make a quarter turn, grill another 4-5 minutes, and flip the patties. Repeat this grilling process, or to your preferred doneness. After the last quarter turn add a 1/4 cup of the Queso cheese sauce to the center of each patty. Keep the grill lid closed as much as possible.
While the burgers are grilling spread the butter on the rolls. Blend together the refried beans, taco sauce, sour cream, and crushed corn chips for the roll spread.
With a few minutes left on the burger
