Ingredients

Sliced grilled/fried onions
One pound ground beef (divided into four servings)
Four poached or fried eggs (done to your liking)
Four large slices of tomatoes
Four large slices of beets (drained and patted dry)
Four large slices of pineapple (drained and patted dry)
Shredded lettuce of your choice
2 tsps olive oil
Four large hamburger buns
Ketchup and mayonnaise mixed together (to create a sauce)
Four slices Pepperjack Cheese
Salt and Pepper, if desired

 

Instructions

In a large fry pan, place 1 tsp of olive oil, add the sliced onions and cook (these can be done on an outside grill as well). In a large frying pan, or on the grill, place the hamburger patties and cooking to your liking. When the onions are cooked, place on a plate and keep warm. In the same fry pan, add the remaining tsp of olive oil and cook the eggs to your liking. Place the cut hamburger buns face down on the griddle or grill, or in the toaster, to toast. Spread the ketchup and mayonnaise mixture on the top half of the bun. Place the hamburger patty on the bottom half of the bun, add the cheese, the tomato, the beet(s), the pineapple, the onions, and the egg. Place the lettuce on the top half in the mixture, and place on top of the bottom half.
