The Big Titan

I live right outside of Houston. Houston is such a diverse community with people from everywhere in the world. Americans love variety. This is a great local American burger because my Big Titan Burger fits into the theme of everything is bigger and better in Texas.

Ingredients

1/2 large cucumber, grated and squeeze out excess liquid
3/4 cup sour cream
1 teaspoon red wine vinegar
1 clove garlic, minced
1 tablespoon fresh mint, chopped
2 teaspoons Green seasoning
3 pounds ground lamb
4 teaspoons fresh oregano, chopped
2 teaspoons fresh mint, chopped
1/2 teaspoon freshly ground black pepper
6 ounces crumbled feta cheese
4 tablespoons Kalamata olives, chopped
1/2 teaspoon Greek seasoning
Grilling spray
1/2 English cucumber, sliced
2 tomatoes, sliced
1/2 red onion, sliced and separated into rings
1 cup arugula
1 cup baby spinach
6 large Kaiser Rolls
2 tablespoons olive oil

Instructions

In a small mixing bowl add grated cucumber, sour cream, 1 tablespoon chopped fresh mint, red wine vinegar, garlic, and Greek seasoning. Mix thoroughly and refrigerate until ready to use.

Heat grill to medium high.

In a bowl add ground lamb, oregano, 2 teaspoons of the chopped mint, black pepper, feta cheese, Kalamata olives, and Greek seasoning. Mix gently to incorporate all ingredients and make into 6 patties, 3/4 inch thickness each.

Place burgers on grill that has been sprayed with grilling spray. Grill burgers on medium high for 6-7 minutes per side. Remove from grill and let sit for 5 minutes. Meanwhile, slice English cucumber, tomatoes and red onion. Mix arugula and spinach together.

Brush Kaiser Rolls with olive oil and place on grill to toast, about 1 to 2 minutes. When toasted, remove bread from grill. Place burger on bottom half of bun. On top of burger, place cucumber, tomato, and red onions. On top half of bun, place 2 heaping tablespoons of cucumber sauce and a small handful of arugula and spinach, and then place on bottom half.

Makes 6 large burgers

I have watched this contest on Food Network for the past two years. This year I decided to enter with great enthusiasm. When watching it, I am amazed at how many wonderful burgers are being made across the country. I am just thrilled to be entering this contest.
