The Baby Boomer Burger
Growing up in the 1960’s California with backyard Bar-B-Q’s. This combines my favorites of Burgers, baked beans, home made french fries, and roquefort wedge salad.
Ingredients:
Meat:
2 pounds ground skirt steak or chuck (15 – 20% fat)
½ teaspoon ground kosher salt
¼ teaspoon fresh ground pepper
Buns:
6 old fashioned white buns
6 tablespoons 85% butter fat European unsalted butter
French fries:
1 large yellow or white flesh potato, peeled and cut into 18 ¼ inch thick matchsticks
¼ cup peanut oil
½ teaspoon paprika
¼ teaspoon ground kosher salt
Burger toppings:
1 beefsteak tomato cut into 6 1/3 inch slices
1 red onion peeled and sliced into 6 1/3 inch slices
2 tablespoons olive oil
½ head of iceberg lettuce cut into 1 ½ inch by 4 inch wedges
Beans:
15 ounce can of Heinz 57 Vegetarian Baked Beans
1 tablespoon molasses
1 tablespoon ketchup
½ teaspoon dry mustard
½ teaspoon onion powder
½ teaspoon garlic powder
Roquefort Cheese Dressing:
¼ pound Roquefort cheese
¼ cup buttermilk
¼ cup mayonnaise
¼ cup sour cream
2 cloves crushed garlic
1 tablespoon minced chives
1 tablespoon minced parsley
Juice of 1 lemon
¼ teaspoon ground kosher salt
¼ teaspoon fresh ground pepper
Instructions:
Method of preparation:
1) Salt and pepper meat and loosely form 6 patties. Set aside
2) Slice onion, tomato and lettuce wedges. Set aside
3) Mix bean ingredients together in small saucepan and bring to boil. Reduce heat and simmer at least an hour to meld flavors.
4) Combine Roquefort dressing ingredients in food processor. Pour dressing in a jar and refrigerate until using.
5) Melt butter and paprika in butter pan and brush on both sides of 6 buns.
6) Spray grill with non stick oil spray. Heat gas grill to medium high heat.
7) Heat olive oil in pan until hot but not smoking. Cook fries turning once until brown. Drain on paper towels.
8) Place burgers on grill and cook approximately 5 minutes total turning only once. Use an easy read thermometer to cook burgers to 160 degrees
9) As burgers are cooking brush tomato and onion with olive oil and cook until slightly browned.
10) Grill buttered buns until brown.
11) Assemble burgers (open faced) on one bun in this order:
Buttered bun
Meat patty
2 tablespoons beans
One grilled onion
One grilled tomato
Wedge of lettuce
2 tablespoons Roquefort dressing
3 matchstick fries on top
Place other buttered bun on plate butter side up next to open faced burger
