The Ali Burger
It represents local beef and adds the cosmopolitan touch of India. It is especially good in the winter.
2 pounds low fat ground sirloin, fresh thyme, kosher salt, freshly ground pepper
handful Japanes chiles
2 Tsp. mustard seed
2 Tsp. cumin seed
3 or 4 sliced garlic cloves or a slug of minced garlic
1 Tsp. olive oil
1 box Pomi tomatoes or 5-6 chopped fresh tomatoes
beef: form patties. push thyme into outer surface. add salt and pepper. rest at room temperature for 1/2 hour while preparing curry.
put oil in saucepan over high heat
add everything but the meat and tomatoes
let the spices cook in the oil until they turn black.
remove the pan from the heat. add the tomatoes. lreturn to the heat. cook until all juice is evaporated and tomotoes are the texture of meat (10-15 minutes). This is curry from Hydarabad India. It forces the spices into the oil and tomatoes
broil or grill sirloin patties 5-6 minutes each side. top with curry. serve with salad greens and/or buns.
It is important to let the curry spices go black. Go easy on the oil. This is a fabulous low fat dish if done correctly.
