"THANKS" FOR THE TURKEY BURGER WITH GRILLED SWEET POTATO, TOASTED MARSHMALLOWS AND CRANBERRY/ORANGE MAYO

THANKSGIVING ON A BUN!!!

Ingredients 

FOR CRANBERRY/ORANGE MAYO:
1 1/2 CUP MAYONNAISE
1/2 CUP FROZEN CRANBERRIES, THAWED AND CHOPPED
1 TABLESPOON ORANGE ZEST FOR THE PATTIES:
2 POUNDS GROUND TURKEY
1/2 CUP FRESH SAGE, MINCED
1/2 CUP FRESH ROSEMARY, MINCED
1/2 CUP FRESH THYME MINCED
4 GLOVES GARLIC, MINCED
1 1/2 TEASPOONS SALT
1/2 TEASPOON FRESHLY GROUND PEPPER
2 EGG YOLKS, LIGHTLY BEATEN
OLIVE OIL FOR MOISTENING HANDS
6 EGG TWIST BAKERY ROLLS
SAGE INFUSED OLIVE OIL FOR BRUSHING ON ROLLS FOR THE GRILLED SWEET POTATOES AND TOASTED MARSHMALLOWS:
2 SWEET POTATOES, PEELED AND SLICED INTO 1/2" SLICES
1/4 CUP COLAVITA OLIVE OIL
1/2 CUP DARK BROWN SUGAR
OIL FOR BRUSHING GRILL

Instructions 

TO PREPARE THE CRANBERRY/ORANGE MAYO, PLACE MAYONNAISE, CRANBERRIES AND ORANGE ZEST INTO BOWL. MIX WELL. COVER AND REFRIGERATE. TO PREPARE THE PATTIES, COMBINE TURKEY, SAGE, ROSEMARY, THYME, GARLIC, SALT PEPPER AND EGG YOLKS BEING CAREFULL NOT TO OVERHANDLE MEAT TO AVOID COMPACTING. DIVIDE MIXTURE INTO 6 EQUAL PORTIONS. MOISTEN HANDS WITH OIL AND FORM 6 PATTIES. PATTIES SHOULD BE LARGE ENOUGH TO FIT ROLLS AND AT LEAST 1" THICK. PLACE PREPARED PATTIES ON PLATE. COVER AND REFRIGERATE. TO PREPARE ROLLS, SLICE ROLLS IN HALF AND BRUSH SAGE-INFUSED OIL ON ALL CUT SIDES. PLACE ON PLATE. COVER AND SET ASIDE. TO PREPARE GRILLED SWEET POTATOES, BRUSH BOTH SIDES OF POTATO SLICES WITH OLIVE OIL. PLACE ON VEGETABLE RACK AND PLACE DIRECTLY ON MEDIUM GRILL. GRILL, TURNING OCCASIONALLY UNTIL TENDER. SPRINKLE TOP OF EACH SLICE WITH BROWN SUGAR, TURN FOR 30 SECONDS. SPRINKLE OTHER SIDE OF SLICES WITH BROWN SUGAR AND TURN FOR 30 SECONDS. REMOVE SWEET POTATO SLICES FROM GRILL. PLACE ON PLATE. COVER AND SET ASIDE. TO GRILL PATTIES, REMOVE PATTIES FROM REFRIGERATOR AND PLACE DIRECTLY ON HOT GRILL. GRILL FOR 8 MINUTES. GENTLY TURN PATTIES AND CONTINUE GRILLING FOR AN ADDITIONAL 8-10 MINUTES OR UNTIL INTERNAL TEMPERATURE READS 170 DEGREES. DURING LAST MINUTE OF GRILLING, PLACE ROLLS, CUT SIDE DOWN ON GRILL TO TOAST, WATCHING CAREFULLY TO AVOID BURNING. REMOVE BURGERS AND ROLLS FROM GRILL. TO BUILD BURGER, PLACE GENEROUS AMOUNT OF CRANBERRY/ORANGE MAYO ON EACH CUT SIDE OF EACH ROLL. PLACE PATTIES ON CUT SIDE OF BOTTOM HALF OF ROLLS. PLACE EQUAL AMOUNTS OF SWEET POTATO ATOP PATTIES.
