Texas Mesquite Bacon/cheese burger

Ingredients

1).five medium size dry Mesquite wood.
2).0ne pound HEB fresh ground beef.
3).1 tbs season all seasoning
4).1 tbs. fresh ground coarse pepper
5).1/4 cup fresh minced garlic
6).1/4 cup fresh minced onion
7).1/4 cup extra virgin olive oil
8) one fresh green leaf lettuce
9).one jumbo tomato
10).one jumbo red onion
11).jumbo hamburger buns
12)mustard,mayo and ketsup
13}two slices of bacon
14)four slices of dill pickles
15)one slice of white cheddar cheese or smoky gouda

 

Instructions

Step one: split mesquite wood to accomodate the size of you grill. step two: secure BBQ pit outside on a concrete or brick floor patio.(mesquite wood pops when burning). Step three: Light your fire. Step four:Mix ground beef, seasoning,pepper,garlic,onion,and olive oil.refrigerate. step five: rinse onion and tomatoe .refrigerate. step six:slice red onion and place in container with water. cover & refrigerate. step seven: fry bacon save drippings step eight: when wesquite coals are red hot slice an onion and wearing thermo gloves run the onion over the hot grill to clean and prep the grill for cooking. step nine: Form and handpatyour pattie about 1/2 to 3/4 inch thick. step ten: carefully coat your grill with a thin layer of bacon drippings,and place your patty on the grill. cover BBQ lid.a tight fit will ensure proper smoking and minimum chance of burning. after cooking both sides ,depending on how you like your meat cook you coat the buns with the remaining bacon drippings and brown over the coals. set meat aside for about 45 seconds place cheese and bacon on top of meat.remove buns from grill and coat bottom with miracle whip. coat the top bun with mustard ;(ketsup is optional). place the meat on the bottom bun the place the leaf lettuce,then a slice of jumbo tomatoe,then the red onion slice the picles and top with the top bun
