Tex-Mex Stuffed Burger

Ingredients

Ingredients:
1/2 cup Chopped White Onion
2 Roma Tomatoes
1/2 Cup Cilantro
2 Key Lime
8 oz Medium Picante (Chunky Medium)
2 Egg (Beaten)
1/3 Cup of Sutter Home Cabernet
1 TBS Salt
5 TBS of Menudo Spice mix.
1/2# Bulk Chorizo Sausage
3 1/2 # Fresh Ground Chuck
6 oz of Queso Fresco cheese
Oil for Grill Grate
6 Kiser Rolls
6 oz. shredded Sharp Cheddar Cheese
Iceberg Lettuce (12 pcs)

 

Instructions

General: Preheat the grill to medium high Salsa: 1 Chop the onions, tomatoes, and Cilantro and place in a bowl. 2 Squeeze the key limes over the ingredients and mix in the Pace Picante sauce then cover and set aside. . Burger: 1 Beat two eggs in a large bowl and add 1/3 cup wine, salt and Menudo Spice. 2 Next, crumble sausage into the egg, wine, salt and seasoning then thoroughly mix in the ground beef. 3 Separate the meat mixture into 12 equal lightly formed balls and press out each to be slightly thinner on the edges than the center. (press out to a size that is approximately the same or slightly larger than the rolls) 4 Place rounded slice of Queso cheese on 6 of the patties. 6 Top each meat patty with cheese with a plain patty and crimp and fold the edges to seal. Grilling: 1 Apply oil to the grill grate 2 Cut Kiser rolls in half ready for toasting on the grill. 3 Place stuffed meat patties on the grill over medium high heat and cook for about 7 to 8 minutes. Carefully turn and cook the second side for about another 6 minutes. Note that grilling time varies depending heat/hot spots on the grill. 4 A couple of minutes prior to taking the burgers from the grill, top each burger with a shredded cheddar cheese (approx 1 oz.). 5 Place the Kiser rolls, cut side down, on the grill, lightly toast and remove from the grill. 6 Place a couple of pieces of crisp lettuce on the bottom ½ of the toasted Kiser roll. 7 Place the burger directly on the lettuce. 8 Generously apply salsa to the top of the burger and top with the top ½ of the toasted roll. 9 Slice as desired and serve immediately.
