Sauce:
1/4 cup mayonnaise
1/4 cup dijon mustard
1 teaspoon crushed hot red pepper flakes
Patties:
1 1/2 pounds ground turkey
1/2 cup diced onions
1/4 cup chopped fresh chives
1/4 cup chardonnay
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
2 tablespoons dry Italian seasoning
1 teaspoon salt
1 cup bread crumbs
Vegetable oil for brushing grill rack
6 slices mozzarella cheese
6 seeded rolls
4 cups shredded iceburg lettuce

Instructions

Prepare a medium-hot fire in a charcoal grill with the cover on, or preheat a gas grill to medium-high. To make the sauce, combine mayonnaise and dijon mustard and the hot pepper flakes in bowl. To make the patties, combine the turkey, onions, chives, chardonnay, lemon juice, olive oil, Italian seasoning, salt and breadcrumbs in large bowl and mix well. Divide the mixture into 6 equal parts and form into patties to fit rolls. When the grill is ready, brush the rack with vegatable oil. Place the patties on the rack, cover and cook, turning onceuntil done, about 5-6 minutes on each side. During the last few minutes of cooking, place the cheese slices on the patties and close the cover to melt the cheese. Remove the patties from grill to plate and then place the rolls, cut side down on the grill to lightly toast. To assemble the burgers, on each roll bottom, place a patty, an equal portion of the sauce and generous amount of lettuce. Add the roll tops and serve. Makes 6 burgers
