1/4 cup Tabasco Chipotle Pepper Sauce
1/4 cup minced shallots
1 teaspoon Kosher salt
1 teaspoon freshly ground black pepper

¼ cup Tabasco Chipotle pepper sauce
1 cup mayonnaise

6 provolone Cheese slices

Divide and shape into six 1-inch thick patties.

Mix ¼ cup Tabasco Chipotle Pepper Sauce with 1 cup mayonnaise

Place burger on grill.

Just before burger is done, top with 1 slice provolone Cheese and place each roll, cut sides down, on grill.
Cook until cheese is melted and roll is toasted.
Remove rolls and spread Tabasco Mayonnaise on each side of each roll.

Serve each burger in bun topped with 2 slices avocado.

Chipotle's are one of my favorite ingredients to play with. I've put them in about everything I've cooked from one time to another. When Tabasco came out with the Chipotle pepper sauce, I was relieved to not have to smoke my own peppers.
This recipe came from a family BBQ where we just gathered what we had at the last minute arrival of surprise out of town guests. It was a huge hit and now they return every year and demand these.
We happened to have a bottle of SH Moscato on hand *whew* as I picked it up the day before wanting to try it. We felt it was a perfect match.
At least now THEY bring the wine :)
